A Fairbanks woman started a business last month selling her favorite food: Toast.
Katrina (Lydon) Hamilton has always been on the go, from playing competitive hockey while attending West Valley High School and the University of Alaska Fairbanks to working at Delta Airlines and Tanana Chiefs Conference, so she often ate toast for its convenience and taste.
“I would just eat toast all the time,” Hamilton said.
Hamilton’s knack for cooking stems from her parents. She said that her dad is a “scientist in the kitchen,” and her mom “can cook anything.”
“My parents are amazing cooks,” Hamilton said.
Hamilton remembers the first time her mother made bruschetta when Hamilton was around 10. “I loved it and I asked for it every weekend,” she said. She’s been obsessed with toast every since.
Hamilton said she loves toast because of its versatility.
“You can put anything on toast,” Hamilton said. “It’s just a vehicle for anything delicious.”
For Katrina, there’s no difference between toast and an open faced sandwich.
“Honestly, I feel like it can be breakfast, lunch, dinner, dessert,” Hamilton said.
Hamilton said that she didn’t want to work a 9-to-5 job after having her son, and wanted to create a business that her husband, Tyler, and almost two-year-old son, Roman, would be proud of.
She quit her job at the end of 2023 to start a business that revolves around her favorite food. “I wanted to go into 2024 totally fresh with a totally, totally clean slate,” she said.
Hamilton launched Toast as a pop-up at Sassy Scoops on Feb. 3. More than 40 people came out to eat toast during a cold snap. Since then, she’s hosted pop-ups at Blush Moon Boutique, Ursa Major Distilling, Lavelle’s Taphouse and Party More.
Here’s how it works: Hamilton sets up shop at businesses around town and sells toast to customers. She offers three to four different sweet and savory toasts.
Her motto is “feel good fast food.”
“I try to make them nutritious but delicious, simple but complex in flavor.”
The toasts Hamilton sells are based on what flavors she likes the most after “toast testing” by her family and friends. Her favorite toast depends on what mood she’s in.
Hamilton hopes to have a booth at the Tanana Valley Farmers Market this summer.
Her dream is to open a cafe of her own where people can relax and eat toast. She said that she would sell toast and nutritious snacks and foods, and also would like to highlight local artists.
